You don’t need us to write lots here, do you?
We try to always buy genuine Japanese papers, as they are considered the best.
We stock white and brown papers in two sizes.
V01: Is 1 cup
V02 is for 2 cups
V60 means the vessel is 60 degrees and “V” shaped.
I think that the relationship between grind size and water temperature is probably more important with a V60 than with any other brew method.
The base method for a 2 cup is:
Start by wetting your filter paper. This can help to wash away any residual papery flavour. Now discard this water.
Place your v60, with wetted paper over your chosen vessel that can take at least 500ml of liquid.
Add 30g of coffee. This is a good point in time to have scales and a pouring kettle!
Start your timer, add 60ml of 95C water to the 30g of coffee and wait for 45 seconds. If you have got the grind just right,
You can now pour hot water to the top of the V60 and let it slowly drain, topping it up until you reach 500ml/ 500g of water.
It should take between 3 and 4 minutes for the perfect brew.
