Sometimes we have to top up between deliveries with coffee from our regular producers. Los Amigos Del Oso (AKA Friends of the Bear!) is a coffee that we have bought over the years, and it is always surprisingly delicious and easy to drink. I would happily take this coffee home and/or even on my travels. Coffees like Del Oso bring a smile to my face with that soft, easy-drinking acidity.  This is great coffee that happens to be organic.

Origin & Background

This coffee is a blend from over 40+ smallholders.

Coffee is wet processed on their own farm, before being delivered as pergamino to Frontera’s own dry mill.

In the dry mill the coffee is cupped, graded and sorted before blending and export.

Brewing and Recipes

Brewed on one of the first KB90 espresso machines and a Pico Home Grinder.

Cup Profile Espresso

18g of coffee into 35g of espresso. 25-30 seconds was our starting point with this coffee. 94C

9 oz Milk-based drink. We were positively surprised by this. Although no way dark, this was vibrantly fruity as well as creamy and delicious.

6 oz milk-based drink: This is the flat white with everything. Juice, cocoa, punch, but not in a roasty way.

Espresso

You may know that I prefer longer espresso shots than some, and I also like balanced acidity. I kept the same amount of coffee in (17.5-18g) and ran this to 50g of liquid in “about” 30 seconds. (+/- 3 seconds). This is bright and juicy, with bags (spades) of grapefruit acidity that don’t leave much room for subtlety.  This is why the milk-based drinks are so vibrant.

You may get an unusual amount of bubbling in your milk-based drinks with this coffee, and that will be down to the acidity.
