If you have bought Colombian coffee from us over the last few years, you may have noticed that they are world leaders in processing. As a country (I know it’s a whopping generalisation, but I can use it because I am being nice ), Colombia grows unusual varietals, adds value through innovation, and has the latest thing in coffee that none of us knew we needed: double-washed coffees. In some ways, this isn’t completely true as 10 years ago, there was an experimental farm that did extended fermentations, that added fresh cherries at different points, to lower the ph, during fermentation. The result was memorable.

I think this has come at a great time. In my experience, there is less appetite for wild and intensely processed coffees, than there was. Now, well-processed, tasty, clean coffees are a relief.

On opening, this is supremely sweet and clean. Mirador doesn’t disappoint. There is just enough front-end acidity to raise a smile, followed by a mixture of apple, stonefruit and a touch of spice.

As the coffee settles and cools, the sweet citric acidity moves to the middle, making this an incredibly easygoing sweet filter.

Filter Recipe:

This coffee has been great in batch (yes! a 3-litre brew to get all of the team lively in the morning)

Base recipe: 60g per litre
