Naturally, every single coffee that we buy matters. I want every kilo of it to taste great where ever it goes as well as make it an easy choice to buy. A little under 6 weeks ago we had just started all things Peru and before we know it I am writing up the fourth coffee from Peru and Burundi and Rwanda are upon us in the nick of time.

Processing:        Fully Washed (24-30 hours of fermentation)

Drying:                  Dried on raised beds undercover for 15-20 days

Aromatics: Chocolatey | Body: Becomes creamy on cooling | Acidity: Elegant white wine.|

In a cupping bowl: On opening, this is cosy, chocolate, and sugarcane. On cooling this opens up into a lovely elegant white wine acidity, adding a really sophisticated dimension. When cool, this is dark chocolate, toasty sugars with a lingering white wine acidity.

Roast level: Light-Medium Filter.

Filter recipe: 60-65g per litre.

Back story

The community that grows this coffee is called “Nehipe”. This is the old name for the Chinchipe river. The Chinchipe flows into the Marañon which is the principal source of the Amazon. The mountains shaping the valley reach heights of nearly 4000 meters above sea level. This is a unique ecosystem in Peru. In the middle altitudes (1200-2000 masl), which cover 45% of the valley, you find tropical mountain forests, full of biodiversity and excellent conditions for agriculture.

In 1998, a national park was formed in the area to protect wildlife and native species called “Santuario Nacional Tabaconas-Namballe“. This is some 32,124.87 hectares. The sanctuary’s purpose is to preserve a sample of the ancient ecosystem. Unsurprisingly, you won’t find any non-organic fertilizers or pesticides in this area. The watercourses are carefully managed for humans and wildlife.
