….and breath! As you may have gathered that it is a challenge to guesstimate just how much or little coffee we need in any given season. It turned out that we had a big surge in orders for Chapin over the last 2 weeks that have literally finished our green stock of all things Guatemala. This is somewhat happy and sad all wrapped into one. Rather than leaving you with no alternative until the first new-season Guatemalan coffee containers arrive, we have been working on a (short-term) alternative, Los-Amigos-Peru. The reason that this works is that Peru also has incredible altitude and some of the same cup characteristics as Guatemala. These elements soften with roast development and are robust in milk, yet are surprisingly delicate and juicy in espresso.

Cup Profile:
In espresso, when rested, this is juicy, sweet and clean. This has a big body, caramelised and rich. In milk, this is full-on grown-up hot chocolate.
Traditional Espresso: 16-17g into 40-45g 25 and above secs.
Bean to cup 19-22g 35-45g. Extraction time on taste.
