For me, this coffee screams of Winter or even Christmas in the cup. If brewed well, this can be like minced pies. It’s not boozy or overripe, just a really cosy, tasty sweet fruity filter. This also happens to be our last coffee from Alejo until 2021.

Varietal: Villa Sachi (Villa Sachi has been highly regarded as a varietal through the rust years in Central America)
Recipe 60-70g a litre
Roast: Medium Filter
Aromatics: Baked Currants| Body: Silky| Acidity: Sweet and curranty|
This is like ripe currants, mincemeat, currants, dates, and brown sugars.
Best brew: Cafetiere
Espresso can work with this roast and coffee if you want.
