Although this may sound a little cheesy, I would suggest that San Isidro is the kind of coffee that you could put in front of someone who doesn’t know all about coffee and say “This is a classic” Costa Rican! If you could ever drink terroir, the clean cup, altitude-inducing acidity, and just simple deliciousness.  This is such an easy coffee to drink and one I would take home again next weekend. Once again Alejo has made this borderline effortless for us.

Recipe:60-70g a litre. Soft (or filtered) water will make this sweeter.

Aromatics: Chocolatey with a promise of juice | Body: Light | Acidity: White fruit sugars & Sweet Citrus, White wine|

Wow! This is not how I remember San Isidro, Red Honey.  Squeaky clean citrus acidity, a touch of black grape sweetness, and a dry, white wine-like acidity on the finish. On cooling there is a white fruit sweetness and a tartness, that flip back and forth. Some half an hour in and the sweetness is just delicious and perfectly balanced.

Farm Stuff:

Volcan Azul is an exemplary producer.  San Isidro is a varietal of Sarchimor descent (a hybrid of Villa Sarchi and Timor) developed in cooperation with Finca Volcán Azul in Costa Rica. It is named after the nearby town of San Isidro. This variety is high quality with good yielding and disease resistance.
