Costa Rica Volcan Azul Yellow Honey Caturra
Volcan Azul Year Three.
One of the exciting things about getting a range of coffees from one farm, such as Volcan Azul is that the variance in processing makes big flavour differentials in brewing, so roasting has to change accordingly. This is literally the same coffee varietal, grown in the same way, just by drying the mucilage changes the cup, by a lot! We still have all of the fruity notes but more body and sweetness that comes from drying in the creamy/slimy mucilage. Of the Three coffees from Volcan zul this season, this is “in the middle” in terms of roast level. Buy one bag and use it for every brew method.

Farm Volcan Azul
Area: Alajuela, Costa Rica.
Established: 1850, 5th generation farm.
Altitude: 1540-1720 Meters above sea level
Process: Yellow Honey
Recipe: 55-65g per litre for Filter or Espresso: 16-17g into 30-35g espresso liquid, 26-33 seconds as a starting point.
Roast: Developed filter. This is very extractable as juicy espresso too.
(Filter). Red plum, cranberry, chocolate, and dry citrus. In cafetiere, this gets riper on cooling.
Espresso: This is so unlike last years crop for us. The fruit is replaced by a shy toasty, cocoa theme in milk-based drinks. The espresso is bright and citric, where unsurprisingly the most complexity comes from this coffee as a cooling filter coffee.
Volcan Azul is a 5th generation farm, producing many different single varietals and processes. The long game is the aim of quality, which we especially like at James Gourmet. The whole process is controlled by the farm and the operation is relatively small. These are all things that work for us. Coffee on a human scale with a history. Echo, echo, echo!
