Translating as “Cafe Owners,” or “Owners of the Coffee” this blend of small farms empowers (mainly) women to thrive in speciality coffee in Brazil. The project has expanded from 3 producers. There is a demand for equality in coffee.
This lively, fresh-crop coffee tastes like it could be from Fraijanes in Guatemala.
I am presenting Brazilian Donas Do Cafe as a One Roast. This coffee has challenged us and Oli (bless him!) has really pulled a rabbit out of the coffee hat. *We class this as a great, vibrant filter that is extractable as espresso.

Flavour possibilities.
On opening, this is so soft and fruity. As the coffee opens up it becomes like stonefruit (think apricots and dark chocolate). On cooling there is a whole sugary fruit salad going on, punctuated by a lingering cocoa and citrus.
Espresso.
We weren’t completely sure that this roast would work in espresso, however, if you can brew at 94C and above and extract 30-40 seconds, you should be able to get it! I would suggest that this is as vibrant as espresso but shy in milk. If you like the idea of lattes and spro’s this could be your bag.
Recipe:
17g of coffee into 45-50g of espresso
Like an echo of the cupping bowl, bright, fruit salad, followed by a chocolate, marmalade-like finish.
17g+ of coffee into 34/35g of espresso in 30 (ish) seconds.
In a 9oz, this is subtle, coffee, lactic, and a touch nutty with a whisp of fruit.
In 6oz, this isn’t much bolder. Subtle, nutty milky caramel.

Donas do Café project aims to be a vehicle of knowledge exchange, contributing to the work of the women who are partners of Cooxupé and SMC. It’s an initiative that brings the names of female producers to the forefront of their businesses and inserts them in the speciality coffee market.
