What’s Winter Hoard? As the name might suggest, it is a fruity, ripe juicy cocktail of a coffee blend. During our year, we buy many fantastic coffees. We save some of our favourites that work in a certain way! This year WH is an Omni and works well as a filter or juicy espresso.It is a different year, with different coffees in.
In 2016, we learned a bit more about our customers’ preferences, particularly in the case of the Winter Hoard. We have changed things around this year and our 5th attempt is making us happy, as it does what the Hoard should.
50% Kenya Karie AB (washed)
25% Binitu Ambela Operation Cherry Red (washed)
25% Ethiopian Yirgacheffe Kochere Grade 1 Natural.
Brew temp 93-94C
Extraction 30+ secs
Espresso ratio 16-18g into 30g (Milk-based into 40g for espresso) Filter: 60g a litre and up for tasty filter.
Outcome: If you can bear it, rest this for 12 days- two weeks before brewing in espresso. We did and brewed and shared a 2.5Kg bag within a day.
In milk, this has as balanced fruit as in the espresso. No exaggeration.Molasses Fruit sugars, Ripe, crisp and masses of berry fruit notes. Busy, complex and sweet. This is hugely understating this year’s coffee.
