SWEET GRAPEFRUIT & STONEFRUIT
Due to the fact that we are a small British independent company (Yay!) we don’t always buy big quantities of every coffee. On occasion, we have a run of decaf done for us and 3 tons or 45 bags of 60Kgs feels like forever! This coffee was the best tasting of what was available.
We have a decaf project we are working on this year, so whilst keeping as many cats in bags as possible, here is our first new decaffeinated coffee of 2018.
Farm: Café Sierra Azul
Varietal: Typica, Bourbon, Mundo Novo
Processing: Fully washed & dried on patios
Altitude: 1,000 to 1,900 metres above sea level

Roast: Developed Filter.
Cup potential: Sweet grapefruit, stonefruit and a first for us… “Croissant!” You know, that hint or whiff of buttery, savoury baking thing?
Aromatics: Think Fruit Winders
Body : Creamy~Oily
Brew recipe: Filter 60g/ Litre + Espresso 17g coffee into 35g espresso/ 30-35 secs.
Sierra Azul is a group of smallholders that have Organic certification, grown over a broad range of altitudes. This means much laborious hand weeding with machetes. Each farmer processes and dries their own coffee, on their own farm, unlike many producer groups.
