SWEET- KEY LIME -FLORAL
Sometimes when we buy coffee, we have to be selfish. The first time we bought good coffee from Beloya we flew some outrageously expensive coffees from Abdulah Bageresh across from Ethiopia. The coffee was a revolution at the time and still (without all of the airfreight and multiple handling) is still amongst my all-time favourite coffees. The Operation Cherry Red Project is something that we are big fans of and have been for some time now.
I don’t know anywhere else in the world that can deliver the same levels of fruit and complexity in a cup of coffee.

Cup Potential Filter:
Complex fruit sugars,Lemon, lime, (Key Lime) and subtle floral notes. This is a light roast and has many flavour possibilities. Good water will help massively with flavour and how much coffee you need.In espresso, this is little short of incredible.
Cup Potential Espresso:
Balanced juicy sweet citrus and more like a key lime/lemon meringue in well made milk-based drinks.
We are running 60g a litre in bulk-brew to keep the team alert. In V60’s and Aeropress, we are using more like 17-18g into 200g of water.
17g-40/45g for espresso 30 seconds plus at a target of 94C. Because the roast is light we like to extract a little longer, for more flavour development.
17g-30g for milk-based short drinks. This still works for us up to 9oz.
