A white peony tea from the South Eastern coastal province of Fujian, a region of very high mountainous terrain at high altitude. The subtropical climate provides wet and dry seasons but some rainfall all year and regular misty weather. This white tea with a large leaf and many white buds is picked with two or three tender young leaves. Leaves are a combination of tips, broken leaf and larger unbroken leaf in colours ranging from white to light green to dark brown. Controlled withering allows the leaf a natural withering process before it is dried at low temperature. A clear, pale infusion with a sweet aroma and a mild flavour with a hint of nutiness.
